For over 400 years, The Fox has been serving the local community, evolving from a historic country pub into a unique destination for authentic Thai cuisine. Led by owner Matt and a skilled team of Thai chefs, it combines heritage, hospitality, and fresh handmade food in a setting of countryside charm.

Meet The Owner

Aussie owner Matt has worked in the hospitality industry since the late 1980s, beginning his career as a nightclub DJ in Townsville before relocating to the UK in 1996. Since then, he has built a successful career within British hospitality, combining a passion for great food, lively atmospheres, and excellent hospitality.

Matt’s journey into the Thai-British pub scene began at The Racing Page in Richmond, London — an experience that would go on to shape his future ventures, including opening Swansea’s first Thai restaurant in 2005.

In 2013, Matt arrived in Tangley to take over The Fox from his sister Kellie following her return to Australia, continuing the pub’s long-standing family presence at the heart of the local community. Matt’s daughter, AJ, is also responsible for one of the menu favourites — the delicious Vegan Duck Spring Rolls!

In 2018, he launched The Travelling Thai, bringing The Fox’s much-loved food and unique concept to festivals, events, and new audiences across the region.

Friendly, ambitious, and full of ideas, Matt is driven by a genuine love for hospitality and is always looking for new ways to enhance the customer experience. He is also active within the community, serving as Chairman of the Tangley Parish Council.

 

After 20 years of managing Thai restaurants, he is the go-to person for menu recommendations! Pop in for a chat and a pint anytime.

Our kitchen is led by a team of highly skilled Thai chefs who bring authenticity, tradition, and years of experience to every dish they create.

From handmade spring rolls to rich, fragrant curries, every meal is prepared using traditional Thai cooking techniques and fresh, high-quality ingredients imported from Thailand.

 

Ingredients such as bird’s eye chilli, Thai sweet basil, galangal, lemongrass, and fresh coriander come together to bring the vibrant flavours of Bangkok to the heart of Tangley.

🕊️ In Loving Memory of Roger Srithao

​Any mention of our incredible chefs would be incomplete without remembering our beloved Head Chef, Rungwison “Roger” Srithao, who sadly passed away in 2025.​ ​

 

Roger was an exceptionally talented chef who worked with us for nearly 12 years at The Fox and The Greyhound Inn in Broughton, shaping the kitchen with his expertise, dedication, and laughter.​

 

His culinary journey took him across the world, from Tokyo to Tel Aviv and beyond, bringing a wealth of experience and creativity to everything he cooked.​​

Roger will always be remembered for his hard work and dedication, and is greatly missed by everyone at The Fox who had the pleasure of working alongside him and enjoying his food.
